THE final of MasterChef: The Professionals saw Laurence Henry crowned the 2018 winner.

The 25-year-old chef from Nottingham went head-to-head with Dean and Oli in the kitchen to create a three course dinner that pushed culinary boundaries. Here's a look back at how the final unfolded in the highest standard of competition yet...

Who won MasterChef: The Professionals?

Laurence Henry beat 48 other ambitious chefs to be named the 2018 champion.

After seven weeks of challenges, the judges managed to whittle down the competition to just three finalists.

Three courses stood in the way of them and the coveted prize, and each finalist received glowing praise from the judges.

But it was junior sous chef Laurence that most impressed the judges at the final stage with his starter of hand-dived scallop with marinated cherry tomatoes, roast tomato dashi, strawberries and coriander oil seasoned with sansho pepper to start.

For the main he prepared loin and belly of suckling pig with a kimchi glaze and braised fermented hispi cabbage hearts, Nashi pear puree and sliced pears.

Finally, for dessert, Laurence made an aerated mint white chocolate, lemongrass and coconut ice cream, with passion fruit ripple and caramelised white chocolate crumb.

Speaking on the show, Laurence said: "I'm still in shock to be fair, it feels incredible."

Judge Gregg Wallace added: "For a chef so young he is an immense talent.

"He has a hunger for knowledge and he is willing to push himself until he accomplishes greatness."

And fans were so thrilled by the result that some even cried tears of happiness.

Laurence currently works as a junior sous chef for Sat Bains in Lenton Lane, a British restaurant with two Michelin stars.

Who are the judges on MasterChef: The Professionals?

Once again, former greengrocer and pudding-loving TV icon Gregg Wallace took charge of the Bafta-winning series.

With him were the somewhat more authoritative cooking minds of chefs-turned-restaurateurs Marcus Wareing and Monica Galetti.

Double Michelin-starred chef Marcus has acquired a whole new wave of fans since joining the show in 2014 beyond those earned with his genius in the kitchen.

The one-time protege of Gordon Ramsay now has three swanky London restaurants: Marcus at The Berkeley, The Gilbert Scott at the St Pancras Hotel and Tredwells.

Monica has crafted a glittering culinary career and a burgeoning sideline as a TV presenter, appearing alongside Giles Coren in Amazing Hotels on the BBC earlier this year.

The Samoan-born New Zealander chef was the first woman to land a senior role in Michel Roux Jr's two-star restaurant Le Gavroche, and now has her own eatery – Mere, in Fitzrovia.

Who won MasterChef: The Professionals in 2017?

Craig Johnston was the youngest ever winner of MasterChef: The Professionals after scooping the top prize last year.

The chef, who comes from Slough and was 21 at the time of filming, cooked a "stunning" three-course meal in the final which bagged him the win.

Since winning the show he has become senior chef de partie at Marcus in London's Belgravia.
