Who is Louisa Ellis?

Louisa Ellis is the senior chef de partie at The Wilderness restaurant in Birmingham.

The Wilderness serves modern British food and is Michelin recommended. It only has 24 seats - so bookings are very hard to come by. To make sure bookings aren't wasted, the restaurant charges a £25 refundable deposit per person.

Louisa is 22, and is the only female chef to have made it into the final 12 Contestants. On one episode, she faced a skills test where she had 20 minutes to cook and prepare a pigeon crown.

What's a chef de partie?

A Chef de partie is in charge of a particular area of production - such as pastry, butchery, fish, sauces or vegetables.

In larger kitchens, each chef de partie might have several cooks and/or assistants - like a demi-chef de partie, commis or trainee chef.

However, in smaller kitchens, the chef de partie can often be the only worker in that department.

A chef de partie is sometimes called a station chef or line cook.

Who is judging and hosting Masterchef: The Professionals?

Former greengrocer and pudding-loving TV icon Gregg Wallace is once again whelming he Bafta-winning series.

Alongside him will be the somewhat more authoritative cooking minds of chefs-turned-restaurateurs Marcus Wareing and Monica Galetti.

Double Michelin-starred chef Marcus has acquired a whole new wave of fans since joining the show in 2014 beyond those earned with his genius in the kitchen. He has three swanky London restaurants: Marcus at The Berkeley, The Gilbert Scott at the St Pancras Hotel and Tredwells.

Monica has crafted a glittering culinary career and a burgeoning sideline as a TV presenter, appearing alongside Giles Coren in Amazing Hotels on the BBC earlier this year.

What does Masterchef: The Professionals involve?

In the first round, the professionals are first put through a Skills Test to examine whether they have the know-how required to pass through.

And this time around the poor chefs have to create and cook a meal from scratch in just 20 minutes.

Luckily they then get a breather in the Signature Dish round when then cook their best food in 1h 15min.

Three chefs then go through while three go home - before the contest gets even tougher.
