Helen Skelton, Joey Essex, Rudimental’s Leon Rolle and Jack Maynard are already lined up to take part.
Lauren, 27, was born without a forearm - but her disability has never held her back.
In one year, Lauren had taken all three titles - British, European and World Champion - for the first time, and graduated from university with first class honours in 2014.
As a swimmer, she competed in two Olympic Games, debuting in Beijing at 15, before qualifying for the final of both the 100m freestyle S9 and the 400m freestyle S9 in London 2012.
In 2016, Lauren secured a silver medal in the inaugural Paratriathlon event at the Summer Paralympics in Rio.
She set herself another huge challenge in 2018 when she joined series 16 of Strictly Come Dancing.
Alongside partner AJ Pritchard, Lauren set her sights on being the first celebrity with a disability to reach the final.

Despite making it to the semi-final, the pair lost their place in the dance off against Ashley Roberts and Pasha Kovalev.
Lauren had refused to wear a prosthetic on the show amid fears it would fly off during a spin.
Instead she celebrated "normalising disabilities" on the prime time BBC show.
And that meant AJ often had to find new ways to do routines because of Lauren's missing right arm.
He said at the time: "Lauren’s message is an important one, don’t let anything hold you back, she has educated me constantly along the way."
Lauren credited Strictly for making her feel "sexy".
