Speaking to The Sun from the posh hotel, he claimed ex-Islanders had "no idea" they would be voting one couple out when they were flown to South Africa for the final.
Bosses kept the huge twist secret by keeping the details out of their contracts.
They were then delivered the news moments before heading back into the villa to face their friends.
Speaking to , Mitch said: "We honestly had no idea.
"They didn't tell us anything until we got to start filming. When I found out, I was buzzing.
"Then we sat down with the execs and they said 'we need to know who you're going to pick'.
"I knew I was going to get that big wooden spoon out and stir the pot. I thrived on it.
"There's a lot of feelings online about what I said but I can't lie. I took some joy out of who I picked."
Arabella Chi and Adam Maxted missed out on making it to the final day after a near-tied vote with Georgia Harrison and Anton Danyluk.
Mitch believes Georgia H and Anton should have been the ones to leave, describing them as "game-players" who are "going for the prize money".
The gas engineer and his fellow co-stars surprised the villa by turning up for a jury vote on who should leave.
He said they were not allowed to discuss their nominations or have any interaction with the cast.
Mitch continued: "I used all my acting skills from the moment I walked through the hideaway door.
"I didn't break character once. All the boys were shouting 'Mitch'.
"I thought 'this is serious moment' so I didn't say anything to any of them, and they were all a bit confused as to why.
"It's a big deal. There's a lot of money on the line, and there's a lot of love.
"Some of the girls were shaking. It was nerve-wracking.
