Gwyneth Paltrow and other celeb ‘chefs’ slammed for dodgy food hygiene in best-selling books

Expert hits out at her recipe for Roast Chicken Rotisserie-Style in book My Father’s Daughter because it 'doesn’t have a safe endpoint temperature'

TOP cookbooks by actress Gwyneth Paltrow give dodgy food hygiene advice, an expert claims.

Professor Ben Chapman hit out at recipes in Gwyneth’s 2013 bestselling book It’s All Good.

He also blasted her recipe for Roast Chicken Rotisserie-Style in 2011 book My Father’s Daughter.

He said it “doesn’t have a safe endpoint temperature, which should be 165F or 74C to ensure you destroy disease causing bacteria.”

He added it suggests heating the oven to 400F and rotating the chicken in a roasting pan — but it does not say what to turn it down to while the bird is turned.

It’s All Good was among 29  big-selling cookbooks that appeared on the New York Times best sellers list for food and diet books between September 2013 and January 2014 which researches analysed.

They found little useful information on how to avoid food poisoning.

Advice they did find was largely inaccurate and not based on sound science.

Only 123 recipes mentioned cooking the dish to a specific temperature. Of these 34 gave information that was “not safe”, the professor of North Carolina State University, said.

It’s All Good’s recipes for Thai-style chicken burgers, Tandoori turkey kebabs, Japanese chicken meatballs, Turkey meatballs and Two-pan chicken with harissa, preserved lemons and green had no endpoint temperatures.

Gwyneth’s spokesman admitted the recipes did not have an endpoint temperature but claimed the directions gave ample cooking time.
