Two men on bikes then flee into a busy road as shocked passers-by watch on.
A construction worker told The Sun: "I saw a kid, aged around 15, fighting an older guy. It looked like he was trying to pull his hand trying to get something like his phone.
"Another teenager then pulled out this huge 10-inch knife and just started stabbing.
"People had stopped to try and help. One man was wearing a Deliveroo jacket.
"One guy pulled over his moped wearing a red jumper looked like he was stabbed and was holding his stomach screaming.
"Another man was down lying on the floor bleeding loads from his head.
"It was mad. It just escalated so quickly and then they took off to escape on the bike."
Police confirmed three people were stabbed in the horror while a fourth person was pushed to the ground.
Three of the victims have been taken to hospital for treatment but officers confirmed their injuries are not life-threatening.
City of London Police said the bloodbath is not being treated as terror-related.
Chief Superintendent Steve Heatley, from the City of London Police, said: “We received reports of three stabbings and a person pushed to the floor on Bishopsgate at 9.46am and officers arrived at the scene at 9.51am.
“Two suspects are being sought as part of the ongoing investigation related to an attempted phone theft and the incident is not being treated as terror-related.
“Stopping phone thefts and bringing perpetrators to justice is a priority for City of London Police. The number of phone snatches is down, due to focused effort including working with colleagues in the Metropolitan Police Service last week to make several arrests.”
BLOODSHED
Horror pictures show blood on the pavement outside a glass office building.
A huge cordon is in place outside the building, which is close to Liverpool Street station.
Witness Caitlin Black, who works at TalkTV, told The Sun: "I was walking to work and I heard a guy shouting out 'oi' and saw someone running towards him and then it just escalated.
"Someone was slashed in the face and one of the robbers stabbed another guy in the arm. I was on the phone to the police and ambulance at the time and trying to wave down police officers.
"It just escalated very quickly. It went from a phone being stolen to three guys getting stabbed.
"I saw blood and the robbers going into people but it wasn't like there was a massive machete or anything. They were punching people at first but the more people that got involved, the more they lashed out.
"The guys who helped were heroes. All these people walking to work just ran over to help a stranger.
"It's a commuter area and right by a police station - everyone feels safe there and is usually on the phone.
"I actually walked with the man whose phone was stolen after and he was saying it was just a normal Samsung the robbers would probably only get £50 for. It's really shocking."
While a local shopworker said: "I was here in my shop working when I saw some guys running past my shop and shouting 'Oi oi oi'.
"After a few minutes I saw a fight break out over there (at the scene) and people running away.
"Then some people came in and told me there was a stabbing. They said there was a man and a lady on the floor, and there was blood."
He added: "I felt scared and unsafe when I heard what happened.
"Something happened to me last weekend, someone hit me with the bottle inside my shop. This area is very unsafe, it's very scary."
London Ambulance Service confirmed they sent three ambulance crews, two advanced paramedics, two incident response officers, a clinical team manager and members of the Tactical Response Unit.
