Cheesy bacon-wrapped puff pastry twists with cranberry filling
(Makes 30)
YOU NEED:
- 600g puff pastry
- 1 egg, beaten
- 1 tsp cayenne pepper,
- Optional; 125g cheese, grated;
- 18 rashers bacon, half smoked and half unsmoked
- 110g brown sugar
- 2 sprigs rosemary
- 200g cranberry sauce
METHOD:
- Preheat oven to 190C / 170C fan / Gas 5.
- Lay foil on two baking trays and place wire racks on top, covering tops of racks with a non-stick spray.
- Roll out pastry and brush egg evenly over them.
- Sprinkle with cayenne pepper and spread on the cranberry sauce.
- Evenly cover the pastry with cheese and use a rolling pin to lightly press it in.
- Slice pastry into strips (about ½ inch thick) and fold each strip in half.
- Pinch ends together and twist repeatedly.
- Cut a bacon rasher in half to create long strips and wrap one unsmoked strip and one of smoked bacon around each twist.
- Place twists on to the wire rack.
- Mix rosemary, salt, pepper and sugar in a bowl, cover each twist in the mix and bake for 30 to 50 minutes until the bacon is cooked.
Chorizo bites with spicy dipping sauce
(Makes 20)
YOU NEED:
- 500g chorizo cooking sausages
- 50g fresh breadcrumbs
- ½ tsp fennel seeds
- ½ tsp cumin seeds
- 300g puff pastry; 1 egg
- poppy seeds
For sauce:
- 2 cloves garlic
- 1 tbsp olive oil
- 400ml passata
- 1 tsp ground cumin
- 1 tsp ground paprika
- 1 tsp crushed red chillies
- 1 tsp red wine vinegar;
- 1 pinch sugar
METHOD:
- Heat oven to 220C / 200C fan/ Gas 7.
- Remove casings from chorizo and mix the meat with the breadcrumbs, fennel seeds, cumin seeds and some black pepper.
- Roll pastry into a 30cm square and cut in half. Divide sausage mix in two, roll to the length of the pastry and place one on each piece.
- Brush pastry edge with egg, roll up then place seam side down on a tray and refrigerate for 30 minutes.
- Cut sausage rolls into 3cm pieces and place on lined baking tray.
- Brush with egg and sprinkle with poppy seeds.
- Bake for 25mins until golden.
- For the sauce, saute the garlic in the oil, add remaining ingredients, season and cook for ten minutes to thicken.
