Mexican Corn on the Cob
(serves four)
YOU NEED:
- 4 corn cobs
- 3 tbsp mayonnaise
- 2 tbsp sour cream
- 3 tsp garlic salt
- 1 lime, juice only
- 60g Parmesan, grated
- 1 tsp smoked paprika, or chilli powder for extra heat
- 1 small handful coriander, chopped
METHOD:
- Get the barbecue hot or preheat the grill to medium/high.
- Place the corn directly on the barbecue or under the grill and cook for 10 to 15mins, turning often, until the kernels are spotted brown.
- Meanwhile, combine the mayonnaise, sour cream and garlic salt – the spread ingredients – in a small bowl and the Parmesan, smoked paprika (or chilli) and coriander – the topping ingredients – in another small bowl.
- Set aside.
- Carefully remove the corn cob from the grill and transfer to a large platter.
- Smear the spread all over each corn cob then sprinkle evenly with the topping.
- Serve immediately.
Lamb Koftas
(serves six)
YOU NEED:
- 1 tbsp tagine paste
- 1 tbsp olive oil
- 1 onion, chopped
- 500g minced lamb
- 1 handful fresh mint, chopped
METHOD:
- Heat the olive oil in a frying pan add the onion and sauté for 2 minutes.
- Pour the onion mixture into a large bowl, stir in the minced lamb, the mint and the tagine paste, then season to taste.
- Divide the mixture into 6 equal pieces.
- Shape the meat around 6 metal skewers, pressing it tightly around each skewer in the shape of a sausage.
- When the barbecue is hot, cook the koftas for 12-15 minutes, turning frequently until browned and cooked through and no pink meat remains.
- Serve in a wrap, either on their own or with a dip.
