That means you have got a couple of months to pack in as many barbecues and picnics as possible.

Beer & honey BBQ skewers
(Serves four)
YOU NEED:
2 cloves garlic, crushed
150ml beer, we recommend Black Sheep ale
100ml honey
1 tsp Dijon mustard
2 tbsp soy sauce
12 chicken thighs, cut into quarters
METHOD: Mix all the ingredients for the marinade together. Add the diced chicken, cover and then refrigerate overnight.
The following day, place the chicken on to soaked wooden skewers and barbecue until they are thoroughly cooked through. Serve with salad.

Halloumi kebabs with mixed pepper rice
(Serves four)
YOU NEED:
1 green pepper
1 red pepper
1 yellow pepper
500g halloumi
1 red onion, cut into wedges
2 courgettes, which you have cut into 2cm chunks
3 tbsp pesto
2 tbsp olive oil
2 packets long-grain rice, microwaveable.
METHOD: For each pepper, finely chop one half and cut the other half into chunks.
Toss the pepper chunks, halloumi, red onion wedges and courgettes in with the pesto sauce then thread on to eight skewers.
Heat the oil and fry all the finely chopped peppers for five minutes until they have softened.
Add the rice and cook for a further five minutes until it is piping hot.
Meanwhile, grill the kebabs for six to eight minutes, turning frequently, until the edges begin to char.
Serve two cooked kebabs per portion along with the pepper rice.

Chicken, coconut & mango salad
(Serves four)
YOU NEED:
120g vermicelli noodles
100ml toasted sesame oil
4 limes, juiced
1 tbsp clear honey
300g chicken breast
1 tsp groundnut oil
60g desiccated coconut
1 bunch fresh coriander, roughly chopped
1 mango, peeled, stoned and sliced into matchsticks
1 red chilli
½ cucumber
1 red pepper
1 little gem lettuce.
METHOD: Cook the vermicelli as per the pack instructions and allow to cool. Make the dressing by whisking the sesame oil, lime juice and honey together until they combine, and season to taste.
Rub the chicken with groundnut oil, season on both sides then sear on a smoking hot griddle until cooked through and no pink meat remains. Allow to rest then slice on an angle.
Place the vermicelli, coconut, coriander, mango, chilli, cucumber, red pepper and lettuce on a serving plate and toss to combine.
Drizzle over the dressing and arrange the chicken on top of the salad to serve.
