Four cheap and easy recipes for filling family meals

FEEDING the family is ever costlier, as meat prices soar.
But there are easy, budget recipes, packed with protein, to keep everyone full for longer.
Here are some ideas . . .
STIR IT UP: Stir-fries are easy and good value. Go to Morrisons for your ingredients.
Dice two chicken thighs, £3.40, and stir-fry until cooked through.
Add a minced garlic clove, 45p, and 150g frozen mixed veggies, £1.03, cooking till veg is tender.
In a bowl, mix two tablespoons soy sauce, 90p, with one of honey, £1.75, then toss through the stir-fry.
This also tastes great when cold, so if you have leftovers it makes an easy on-the-go lunch.
VEGGIE GOOD: This lentil-and veggie shepherd’s pie costs just pennies per portion.
Head to Asda for your ingredients and start by cooking 200g dried brown lentils, £1.50, in 500ml veg stock until tender, for 25 minutes.
As the lentils simmer, sauté a diced onion, 99p, and two diced carrots, 69p, in a pan.
Mix the cooked lentils with the veg and a teaspoon of paprika, £1. Top with mashed potatoes, £1, mixed with a tablespoon of butter, £1.99.
Bake at 180C for 20 minutes until golden. It’s filling and leaves you with enough ingredients to make another portion.
CHILLI OUT: Pork mince is an affordable alternative to beef, and this chilli is a crowd-pleaser.
Grab your ingredients from Aldi.
Brown 250g pork mince, £2.59, with a diced onion, 99p, and add a teaspoon each of chilli powder, 75p, and cumin, 65p.
Stir in a tin each of kidney beans, 33p, chopped tomatoes, 39p, then simmer for 15 minutes. Serve over rice, or alone.
SPICE ’N’ SIMPLE: Creamy chickpea and spinach curry is a veggie winner.
Get all you need at Tesco then sauté a diced onion, 21p, and two minced garlic cloves, 65p, and add a teaspoon of curry powder, £1.25.
Stir in a tin of chickpeas, 49p, tin of coconut milk, 79p, and 100g frozen spinach, £1.60.
Simmer for ten minutes until the spinach is tender and the flavours meld together. Serve with rice or bread.
