Using leftovers and forgotten frozen items, you can create an epic dish. Here’s how.

GOOD EGGS: Got a box of eggs in your fridge? Then you have a head-start on brunch.

It’s the starting point for a delicious filled omelette.

Now search the veg drawer. Fry up whatever you find — chopped peppers, grated carrot, sliced spring onions — along with any leftover meat, fish or tofu.

Add the mix to the middle of the cooked omelette, flip it over and finish it off with a dash of any spicy sauce. Sweet chilli or sriracha are perfect.

START THE DAY THE MEXICAN WAY: This filling brunch dish — an easy take on huevos rancheros — is perfect if you have leftover tomato pasta sauce.

Get it bubbling in a pan, loosening it a little bit, if necessary, with a dash of water. Add chilli powder for spice.

Crack in a couple of eggs and let the sauce bubble until the eggs are cooked — putting a lid on will speed things up.

Serve an egg and some sauce on top of a warmed wrap, if you have one, or any other bread if you don’t. Add a dash of any cheese and salad you have.

How to find the best bargains at the supermarket

All the cool kids are swapping avocado on toast for peas — less food miles and just as tasty.

You could defrost the peas and whizz them up in a food mixer with olive oil, garlic and feta, then top a piece of chunky toast.

Or fry the peas in oil, add chopped spring onions and a squirt of lemon juice then mash the mixture up, season with salt and pepper, and add any herbs you have.

Serve on toast that has been rubbed with the cut side of a clove of garlic.
