Here’s how to make good food go further . . . 

SPUDDY GOOD: Did you know those last bits of potato salad can be reinvented into crispy, delicious roast potatoes?

Simply spread the leftover potato salad on a baking sheet, drizzle with a bit of olive oil, and roast in the oven at 200C until golden brown.

The mayonnaise and mustard will help crisp them up and make an excellent snack.

’SLAW SAVING: Coleslaw can easily be transformed into a crunchy topping for tacos or try using it as a topping for a Buddha bowl.

Just arrange fresh veggies, a grain such as bulgur wheat or rice and add protein such as chicken or salmon then layer your leftover coleslaw on top.

CRUNCH TIME: Don’t toss out those stale crisps. Instead blend or crush them into fine crumbs and use them as a crunchy topping for a pasta bake.

Alternatively, you can use the crumbs as a coating for fried chicken.

Simply dip chicken pieces in egg, then in the crisp crumbs, and fry until golden brown — it’s a great alternative to breadcrumbs.

VEGGIE GOOD: Leftover roasted veggie skewers can be the perfect base for a light summer soup.

Remove the vegetables from the skewers and blend them with either vegetable or chicken stock until smooth.

Heat the mixture on the cooker, adding some cupboard herbs and spices. You can freeze this in portions and have it for future meals as well.

ROLL WITH IT: If you bought too many burger or hot dog buns and they went a bit stale, don’t worry, they can still be put to good use.

Make mini pizza rolls by cutting them in half and coating them with tomato passata and grated cheese. Pop under the grill for a tasty snack.
