Sun Saver Winnie Fung’s tips for pickling radishes got me thinking . . . what else can you “vinegar-up” to save money?

For Winnie’s pickled radish, peel and slice the radish, pop it into a bowl, sprinkle with salt and leave for two hours to draw out the moisture.

Meanwhile, put 2 tbsp salt, 1 tbsp chili flakes, 2 tbsp sugar, 250ml water and 250ml white vinegar into a saucepan and bring to the boil. Stir until the sugar and salt have dissolved, then set aside to cool.

When the radish is ready, drain away the water, pop the slices into jars and pour over the pickling liquid, covering fully. Store in the fridge.

Winnie says: “The flavours take two to three days to develop. I serve mine with ramen noodles or a bowl of rice.”

Here are my top three picks of other popular pickles.

Avocado. Delicious already but they turn quickly and are not cheap. Pickle with 1 cup distilled white vinegar, 1 cup water, ¼ cup of sugar, 1 tbsp rock salt, 1 tsp chilli flakes, 1 clove garlic, thinly sliced, and a few sprigs of coriander. In a pan, on a medium heat, mix the vinegar, water, sugar and salt, bring to the boil then let cool. Put the other ingredients, including the sliced avocado, into a jar and pour the liquid over. Refrigerate for at least three hours then serve.

Mozzarella and feta. Slice the cheese and pop into a jar with fresh basil and oregano. Bring 1 cup distilled white vinegar, 1 cup water, ¼ cup of sugar and 1 tbsp rock salt to the boil. Leave to cool, then pour into the jar to cover the cheese. Super-tasty in a salad.

Cherries. Get 2 cups of cherries, ¾ cup of sugar, 1½ cups cider vinegar and 6 cloves. Pack the cherries into a jar while bringing the vinegar, sugar and cloves to a boil. Simmer for 10 minutes. Leave to cool and then pour over the cherries. Store in a dark, cool place for a month before eating. The best thing about these pickled cherries is how long they last. Once they have cured, they will keep for up to a year.
