Make the most of your Christmas leftovers by turning them into tasty dishes

STILL wading through leftovers? It is predicted we will waste 91million slices of turkey this Christmas, with loads still left after Boxing Day.

So it pays to turn your leftovers into tasty dishes. Here are some bargain recipes to help you on your way . . .

TOP IT OFF: Turkey-topped pizzas can be frozen to use for January dinners. All you need is a couple of pizza bases (£1.20, Sainsbury’s), a jar of tomato pizza sauce (90p, Tesco), your turkey, leftover stuffing and some mozzarella (49p, Asda).

Assemble the pizzas and place in the oven for about ten minutes. It’s far cheaper than ordering a large pizza from Pizza Hut for £22.39. One pizza should serve two people, making it £1.30 a serving.
CURRY FAVOUR: A turkey curry is my favourite dish to whip up. Sainsbury’s has a nice jar of curry sauce for 55p. Serve with long-grain rice (45p for 1kg bag at Tesco) and you should be able to feed four people for about 30p a portion. Bulk with rice if you’ve got less meat.
PERI NICE: If your family love Nando’s, but you’re not a fan of the price, marinate your leftover meat in Peri Peri spice rub (94p, Asda) and some olive oil.

Add classic sides like corn on the cob (£1.50 for six frozen mini cobs at Tesco) and oven fries (McCain’s oven chips, 1.36kg, £2.30, or two for £4 at Iceland).

Sprinkle some of the spice mix over the cooked chips for your own Peri Peri salt. If you can get enough meat for two people, it’s still only £2.10 each, with plenty of fries left over for another meal.
FESTIVE BAKE: You’ll need your leftover turkey, some cooked pasta (two 500g bags for £1 at Asda), bacon pieces (£1 at Iceland) and any other meat veggies — I like to chuck in peas and sweetcorn (£2, Tesco). Stir in a jar of Homepride tomato and pepperoni sauce (£1.60, Tesco).

Load it all into a dish, top with grated cheese (£1.75, Asda) and bake in the oven. You should have enough for six people, which makes it £1.23 per portion.
