The cooling and refreshing Bloody Mary gazpacho you’ve always needed
During this hot weather the best lunch you could possibly have is a nice and cool one
A liquid lunch - quite literally.
Now the weather is warming up a bit, it’s probably about time to drop the soup and choose something more refreshing instead.
This is where gazpacho comes in.
It’s delicious, filling and nutritious – and best of all it’s made with ice cubes, meaning it’s served cold. Making it a great meal for when the sun is out, due to its cooling properties.
INGREDIENTS:
2 x Tablespoons of extra virgin olive oil (plus a bit extra to drizzle)
1 x Tablespoon of sherry vinegar
500g of Ripe plum tomatoes (around 6 large tomatoes) – roughly chopped
Handful ice cubes
1 x Small red onion, peeled and roughly chopped
1 x Cucumber, peeled and roughly chopped
1 x Red pepper, deseeded and roughly chopped
1 x Clove garlic, peeled
1 x Red chilli, deseeded and finely chopped (optional)
Pinch caster sugar
Sea salt
2 Shots vodka (70ml)
1 x Handful of basil leaves to garnish
DIRECTIONS:
1. Starting with the vegetables and garlic, place everything into a blender before topping it off with ice.
2. Blitz well in a blender, until completely smooth.
3. Divide between serving bowls, drizzle with extra virgin olive oil and garnish with basil leaves.
