INGREDIENTS:

1 x Half of a small gem lettuce

30g of grated mature cheddar cheese

1 x Cup of salsa

1 x Half of an avocado

1 x Tablespoon of sour cream

30g of nacho chips

1 x Chicken breast

1 x Sachet of burrito spice mix [or to make your own follow the recipe below]

1 x Tablespoon of olive oil

50g of white rice

BURRITO SPICE MIX

1 x Tablespoon of sweet smoked paprika

1 x Half tablespoon of ground cumin

1 x Tablespoon of chopped fresh coriander

Salt and pepper to taste

PREPARTIONS:

  1. Preheat a griddle pan over a high heat.
  2. If you’re using the pre-mixed sachet of burrito mix, add the chicken breast to a bowl with the spices and oil before mixing well and massaging the spices into the breast.
  3. If you’re making your own spices then combine the paprika, cumin, coriander, salt and pepper into a bowl with the chicken and oil, before massaging the spices into the breast.
  4. Place the chicken on the hot pan and cook for 10 minutes until charred and cooked through, before leaving to cool off.
  5. Wash the rice before cooking to take away any starch.
  6. Place rice into a pan with boiling water and salt. Allow to boil, before reducing down to a simmer, stir once and cover.
  7. Let the rice cook for 15 minutes before draining any leftover water.

  3. Place cheese on top of lettuce before layering up with salsa and sour cream.

  4. Chop the chicken breast into strips and place on top of salsa and sour cream before slicing the avocado into strips and placing it next to the chicken.
