She hired the hottie as her assistant at Ralph Lauren back in season seven - and not because his CV contained qualifications like "three years of painting houses" and "two whole summers at T.G.I. Friday's".
Rachel had a huge crush on the hunky, floppy-haired 24-year-old which she tried to keep under wraps until she caved in and the pair began an affair.
Eventually, on her 30th birthday, she realised he wasn't the man for her as he was too young and immature.
So what has actor Eddie Cahill, who played the office assistant, been up to since he parted ways from the Central Perk crew in 2001?
He's actually enjoyed a very successful career on American television, starring as Mike Dolan in Demontown and Detective Don Flack in 197 episodes of CSI: NY.
More recently he appeared in the CBS Stephen King TV adaptation Under the Dome as the rather unsavoury Sam Verdreaux.
Now 38, he's set to star alongside Brit actress Hayley Atwell in upcoming TV drama Conviction, about a Los Angeles unit investigating police and court corruption.
And unsurprisingly, he's still pretty gorgeous, despite having ditched Tag's luscious long locks.
