The cook, who works in e-commerce, already has more than 65,000 fans and his popularity is growing among the cost-conscious.
Speaking to The Sun, Miguel, said: "I started making meals for £1 after I became fascinated with stripping back dishes to their core ingredients.
"Originally I was only concerned with the effects of superfluous ingredients on flavour - for example why do some people put garlic in a chilli con carne?
"But I then started to become aware of how the prices of my dishes were rapidly decreasing.
"I became obsessed with that aspect, and One Pound Meals was created."

From chicken and leak pie for 92p, Spanish omelette for 68p, paella for 99p to mushroom gnocchi for as low as 38p, there are so many recipes you can pick from.
Miguel admitted that it's hard to keep the cost of his meals under £1.
"Sometimes it can be hard to cook the more costly classic dishes for under £1, so I like to create my own fun twists.
"For example I am currently working on a beef wellington inspired recipe to create a delicious goats cheese wellington," he said.
His top tip to fans is to maximise the few ingredients you have and shop at Lidl to get the best deals.
Miguel added: "For example, if you were making a chicken and couscous dish, you could deglaze the pan to create a tasty couscous instead of adding a stock cube.
"Most of the time I end up shopping in Lidl, as often they cannot be beaten on price, but i tend to shop around for more adventurous ingredients that can inspire me to cook a certain dish."
