RECIPES
Keep your eyes on the footie, with these match-day dishes that are the perfect handful.
Serves four
Preparation time: 10 mins
Cooking time: 15 mins
You need:
- 450g beef
- 1 tbsp vegetable oil
- 1 onion
- 2 green peppers
- 2 red peppers
- 1 jalapeno
- 2 garlic cloves
- 1 tsp cumin, ground
- 1 lime
- 2 tbsp fresh coriander
- 1 pack tortilla wraps
Method:
Season the steak with coarse ground black pepper and set to one side.
Slice onion and peppers into thin slices (around 6mm).
Crush the garlic, then finely chop the chilli and coriander.
Fry the onion and chilli in a little oil for 5 minutes, without allowing to brown.
Add garlic, peppers, cumin and season to taste, then cook on a low heat for 10 minutes.
Finish by adding the juice of half a lime.
Sprinkle steak with sea salt and sear to medium in a hot pan til meat feels springy to touch. (Chef tip: The more underdone the steak, the greater the springiness and the more blood will be shown on the plate.)
Set aside the steak to rest for five minutes.
Cut the steak into strips (approx. 3mm).
On warm tortillas, place equal amounts of onion and pepper mix, topped with steak strips. Sprinkle with freshly chopped coriander and a squeeze of lime juice.
Roll and cut in half to serve.
Serves four

Cooking time: 20 mins
You need:
- 1 small onion
- 475g beef mince, or any mince you would like
- 20g vegetable oil
- 4 burger buns
- ½ half an iceberg lettuce
- 3 tomatoes
- 80g cheese
- 2 gherkins, per burger
Method:
Finely chop the onion into as small as possible pieces.
Mix the beef mince (or whatever mince you are using) with the chopped onion.
Add a little salt and plenty of black pepper, mix altogether so the onions are well distributed.
On a clean board or bench turn out the mince mix and split into 4 even portions and shape into patties/burgers (the thinner the better as they will cook more evenly).
In a clean pan add a little oil (just enough to brush the base of the pan).
Fry the burgers off, you may need to do two at a time depending on the size of your pan.
If you want to toast the buns for extra flavour, now would be a good time while your burgers are cooking.
Once the burgers are cooked through, top with a little cheese if you’d like to. Now it's time to build your burgers.

Use any toppings you like gherkins, mustard, ketchup, lettuce, tomato onions, mayonnaise the list goes on.
Serve with chips salad, coleslaw, pickles, sweet potato fries or wedges.
COVID safe celebrations

Before inviting a crowd, check how many people the restrictions allow in your home or in your garden.
When the goals get the better of you, whether you can hug depends again on where you live. In England, you can use ‘personal judgement’.
Try and avoid nibbles where everyone is eating from the same bowl. Instead offer individual packets and serve up the main meal on plates with knives and forks.
Respect other people’s views. If your best mate would rather stay at home this time, don’t get the hump.
Don’t be afraid to make some house rules and ask guests to stick to them.
Have a bottle of sanitiser on the side for anyone that wants it.
