What are Joël Robuchon’s most famous recipes and what were the Michelin starred chef’s best restaurants?

Who was Joel Robuchon?

He was the most starred chef in the world, and was known by everyone in the gastronomic world.

He also mentored Gordon Ramsay in Paris, and Joel is also known to be the only person to ever hurl a plate at the hot-tempered chef.

Speaking of the incident and why he did it, Joel said: "I remember it was a dish of langoustine ravioli.

"He hadn’t made it properly. I told him so and Gordon reacted in a very arrogant manner."

What were some of his most famous recipes?

Joel Robuchon won his Michelin stars with which is basically French mashed potatoes.

It's a dish that's served at all of his restaurants and one he is often associated with.

To make the dish you'll need:

  • 2lbs potatoes Ratte or Yukon
  • 1lb pound butter chilled cut into small cubes
  • 1/2-3/4 cup of milk as needed
  • Salt

And another slightly fancier dish of his is the pear claftois with honey, for which you'll need:

  • 1 shortbread pie crust
  • 25 ounces of pears (3 pears)
  • 4 ounces of runny honey
  • 2 eggs + 2 egg yolks
  • 3 ounces of superfine sugar
  • 1 ounce of potato starch
  • 1 cup of heavy cream
  • 1 ounce of slivered almonds

Which were his best restaurants?

Joel had 25 restaurants all spread over Asia, Europe and North America.

The majority of them have Michelin star ratings, and the most of the highest rated are in Asia, with L'Atelier de Joël Robuchon in Hong Kong, Robuchon au Dôme in Macau, Restaurant de Joël Robuchon in Singapore and Le Chateau de Joël Robuchon in Tokyo all gaining three Michelin stars.

Joël Robuchon in Las Vegas also has three Michelin stars.

He has a total of 31 stars
