Do you ever get short of inspiration when trying to think of new dishes to keep the family interested during the week?
We've got 2 recipes from kitchen ace Annabel Karmel that are quick and easy to prepare and are bound to go down a treat.
Gnocchi with broad beans, pancetta and mushrooms
Serves 4
Prep time: 5 minutes
Cooking time: 25 minutes

- 130g pancetta, diced
- 1tbsp olive oil
- 250g mixed mushrooms, sliced
- 100ml white wine
- 200ml double cream
- 200g frozen broad beans
- 400g gnocchi
- 40g Parmesan, grated
- 30g Cheddar, grated
- Preheat the grill. Cook the pancetta in the oil in a frying pan until golden, then add the mushrooms and fry for 2 minutes. Pour in the wine and cream and bring to the boil. Set aside.
- Cook the broad beans in boiling water for 2 minutes, then add the gnocchi and boil for a further 2-3 minutes. Drain.
- Add the broad beans and gnocchi to the frying pan, with the Parmesan. Mix well and season. Spoon into an ovenproof dish and sprinkle over the Cheddar. Grill for 8-10 minutes until bubbling.
Teriyaki beef stir-fry
Serves 6
Prep time: 5 minutes
Cooking time: 20 minutes

For the sauce:
- 4tbsp soy sauce
- 2tbsp mirin
- 2tbsp caster sugar
- 2tsp rice wine vinegar
- 1tbsp corn flour
- Squeeze lemon
For the stir-fry:
- 2tbsp sunflower oil
- 4 x 200g sirloin steaks, sliced into strips
- 2 shallots, sliced
- 2 large courgettes, sliced into batons
- 2 large carrots, peeled and diced into batons
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 2 large cloves garlic, crushed
- To make the sauce, place all of the ingredients into a bowl and whisk until smooth. Pour into a saucepan and stir until boiling and the consistency has thickened.
- Heat 1tbsp oil in a large wok until very hot. Season the steak and fry quickly in batches until brown but still pink in the middle. Transfer to a plate.
- Pour the remaining oil in to the wok, then add all of the vegetables and stir-fry for 3-4 minutes. Add the garlic and fry for 15 seconds. Add the sauce and bring to the boil. Return the beef and juices to the wok, then season and toss over the heat for 1 minute or until warmed through.
