Mum-of-12’s ‘winging it’ lasagne soup that’s yummy and nutritious, kids love it & it’ll heat you up on snow days

A MUM of 12 has revealed the "yummy and nutritious" homemade soup that her kids love - and it's the perfect winter warmer for snow days.

Zoe Sullivan, 46, husband Ben, 49, and their dozen children make up one of the country's biggest families.

The couple are parents to Elisabeth, 19, Olivia, 18, Noah, 14, Evangeline, 12, Tobias, 11, Agnes, seven, Joseph, six, Florence, two, and two sets of twins - Charlotte and Isabelle, 16, and Leah and Erin, eight.

The entire brood live in a six-bedroom house in Burghead, Moray, where they regularly document their hectic lives on .

In a recent post, mum Zoe was in the kitchen preparing a dinner for her massive family.

And she admitted she was "winging it" as she attempted an unusual soup creation - lasagne soup.

She said: "We're literally just making it up. So it's a lasagne soup which I know sounds weird but actually looks really nice.

"We're kind of winging it because I don't actually know how much stuff I should be adding so I'm basically just going to make a lasagne and add some stock to it"

She added: "I actually don't know how many people I'm cooking for this evening because I don't even know who's here and who's not so I'm aiming to cook for about 10 people, 12 people."

And like with all things, the busy mum had to super-size the ingredient list to make sure there was enough to go around.

In total, she used half a bag of frozen onions, 1.5kg of beef mince, three jars of tomato and basil sauce, garlic powder, 1.5L of vegetable stock, tomato puree, a full box of lasagne sheets and 150ml of creme fraiche.

First up, she browned the onions and mince in a pan before adding the sauce, garlic and stock.

She then stirred in some tomato puree, broke up all of the lasagne sheets in the pan and left it to simmer.

Once she was happy that the pasta was cooked through, Zoe added the creme fraiche to give the soup a creamy feel.

She said: "Obviously with lasagne you normally have the creamy white sauce and I'm not putting that in.

"You can add cream but I didn't really want to so I've gone for creme fraiche because it's slightly lower in everything.

"I just want a bit of a creaminess to it without overpowering it."

Praising the dish as "simple to make", Zoe finished it off by adding an optional sprinkling of mozzarella cheese to the bowls as she served up with garlic bread.

She said: "You could put cheese in [the soup] if everybody likes cheese but not everybody likes cheese in here so I'm just going to add it to everyone's [bowls] individually."

The savvy mum estimated that the dish served up 10 portions, with the ingredients for her massive pot adding up to £20.

"So that's about £2 per portion which I think is pretty good to be honest", the chuffed mum concluded.

"It's really yummy, they [the kids] like it and it's fairly nutritious."
